Spelt (Triticum spelta), also known as dinkel wheat or hulled wheat, is a species of wheat that has been cultivated since approximately 5000 BC.. Spelt was an important staple food in parts of Europe from the Bronze Age to medieval times.Now it survives as a relict crop in Central Europe and northern Spain, and it has found a new market as a health food.
The gluten in spelt flour is a little unusual. Unlike wheat flour, which is quite resilient and often needs a long kneading time (with breads) to strengthen its gluten and give the bread structure, the gluten in spelt flour breaks down fairly easily. Unlike wheat flour, the gluten in spelt flour is weaker. As a result, spelt flour will break down with too much handling. Wheat gluten actually strengthens with kneading.
